Azerbaijan lies in the Caucasus, on the western shores of the Caspian Sea. Despite an ancient cultural heritage, Azerbaijan has long been dominated by more powerful neighbours, and tensions still exist with nearby states. Independence was declared in 1991. The Caucasus Mountains are in the north of the country, while the southern part is flatter. The country has rich reserves of minerals, oil and natural gas. Offshore drilling promises more development. Baku, the capital, has a number of historic sites like Quadrangular castle and the fifteenth century Palace of the Shirvanshahs. Its more modern architecture, its shopping malls and its lively nightlife have given it the nickname of the ‘Paris of the East’, and a reputation for being an expensive city. Plov or saffron rice is the national dish, and black tea is the favourite drink. There is a long tradition of folk music and dance. The beginning of Spring is celebrated each year at the Novruz Bayram holiday, held on the vernal equinox. Azerbaijani carpets are famous for their intricate patterns. Chess and backgammon are very popular games at all levels.
